Previously working for big wineries like Houghtons, in 2009 Paul turned his attention to creating his own, highly boutique wines from the oldest vineyard and cellar door in Denmark. His first year as a go-it-alone winemaker saw his winery listed as a James Halliday Top 10 winery.

Join us in the Wine Loft as sake sommelier Tika Maya Vujovic as she introduces us to the world of premium Japanese sake. This rich, cows’ milk cheese is made with whole milk enriched with cream. It has a dense, creamy texture similar to ice cream when young which gradually becomes softer due to the ripening action of the fluffy, white rind. This cheese is at its best when the rind has slightly discoloured and the texture inside has become soft and luscious! Now available from our Fromagery!

The Perenzin family dairy has been making artisan cheeses for four generations. They practice a unique blend of modern, innovative cheese making, whilst remaining true to local history and traditions. All processes are supervised directly by Carlo Piccoli, a seasoned cheese maker with over twenty years’ experience in the dairy industry. The Formajo Ciock al Vino Rosso is inspired by epochs long past. Cheeses were hidden in fermenting grape must, keeping them protected during times of unrest, from warring factions and landlords alike!
10 days in red grape must imparts a mildly spicy wine-like flavour to this semi-hard cheese. Its pâté is smooth textured with few (if any) holes. Some of the grape skins are retained on the rind, creating a striking visual element as a platter or table cheese.
