White asparagus is traditionally hard to find because there is such a demand from chefs and foodies who consider it to be a rare spring delicacy - it is appreciated for its mellow flavor. White asparagus is grown in complete sun deprivation - other than color, there’s no difference between green and white asparagus — white asparagus is simply green asparagus that hasn’t been allowed to turn green. The way white asparagus is grown is that it’s covered in a thick layer of mulch and dark plastic so that no sunlight reaches theway the vegetable never gets a chance to turn green because no photosynthesis takes place! The local WA asparagus season has just begun! We have the first pick, which are from Albany - they have thicker spears that are moist and flavoursome and perfect for family barbecues. Try spicing up good quality mayonnaise with a touch of wasabi as a dipping sauce for barbecued spears! They are a very good source of folate too.
