Ingredients
6 cooked Mandurah crabs
Olive oil
1 shallot finely chopped
1 clove garlic finely chopped
1 large red chilli sliced
1 cup good quality dry white wine
1 cup good quality chicken stock
1Tbs butter
Salt and Pepper
Handful chopped Italian parsley
Linguine
Method
1.Clean crabs and remove meat from body. Save the claws.
2. Cook linguine in a large pot of salted water until al dente.
3.In the meantime saute shallot, garlic and chilli in olive oil until soft.
4. Add wine and simmer for 5 minutes.
5. Add chicken stock and simmer for a further 5 minutes.
6. Add crab meat and claws and warm through.
7. Stir through butter and seasoning to taste.
Divide cooked linguine between 4 pasta bowls. Add crab. Garnish with chopped parsley and serve with a bottle of cold white wine.
