Terre a Terre is a French expression meaning ‘Down to Earth’. Carefully selected vineyards in cool climate regions of South Australia provide fruit for a range that reflects European styles of winemaking, focusing on texture and structure. Join us in the Wine Loft for a very special cheese cracking of the very limited Beaufort d’Alpage Cheese that will be matched with delicious French wine. This is an incredibly special cheese! The AOC rules dictate that Beaufort can only be made in the Savoie and Haute-Savoie departments in the Rhône-Alps region of eastern France. Beaufort d’Alpage (meaning “of mountain pasture”) is only made in the summer in small mountain chalets. The milk comes from the Tarentaise breed of cows that graze at altitudes of 6,000 feet or more. It takes approximately 530L of milk, the daily production of 30 cows, to make 1 wheel of Beaufort. Beaufort d’Alpage is a hard cooked mountain cheese with a smooth texture and a rich, nutty sweet flavour.

Winemaker Diego Santanta join’s us all the way from Spain for an in depth talk about the wines of Rioja and Valenciso. From humble beginnings, Valenciso have become a leading light amongst Rioja’s small band of micro, terroir focused producers. Their Rioja Reserva is widely considered to be one of the regions benchmark reds. Valenciso’s wines are subtle, elegant and super refined.
At a dinner in Melbourne, circa 2012, Jesús Barquín, renowned Spanish wine writer and founder of the Equipo Navazos project, had a very clear message about Valenciso. He said this: “If you asked me to name just one producer from Rioja that you should buy, it would be Valenciso.” Enough said!

The 2018 release had great depth of colour and was much richer and more vibrant than 2017, carrying really beautiful purples and reds to bottle. Flavour-wise it showed dark fruit, red berry and spice. There was also plenty of that classic Yarra Shiraz white pepper. And of course a lovely ginny character carried those grape aromas, making it unmistakably gin. The palate was lovely and sweet, with long juniper and spice characters to finish.

Join us for a tasting in the Cheese Department, from Friday 17 May 2019 from 4 pm to 6 pm. Established in 1984, Cashel Blue® is the original Irish farmhouse cow’s milk blue cheese. Cashel Blue has a white appearance or paste as it is technically called when young turning increasingly towards a buttery yellow as it matures. Throughout this paste there is a blueing often referred to as having marble-like pattern. The rind, which with time can develop a film of surface mould is untreated and is therefore edible. It is intrinsic to the cheese and contributes to the breaking down of the paste, adding further flavour and complexity.
