Join us in the Wine Loft this Thursday, 5 December as we use traditional methods to crack open a premium wheel of Gruyère that has been aged for 24 months! Gruyère is a benchmark PDO cheese from Switzerland, who’s production and ageing is strictly controlled. Its production can be traced back to 1115, although not officially recognised under this name until the 17th century. As with other cheeses from mountainous regions, the creation of large wheels of cheese was an important way of conserving food for the long and cold winter months. Herds would ascend to the high altitude pastures over the summer to take advantage of the rich array of grasses and flowers.
Gruyère des Grottes, which translates to Gruyère of the caves, is aged in natural limestone caves in the Swiss Alps. Ours has been aged for 24 months which bestows it with a rich and powerful character.
The delicate flavours of Gruyère make it a versatile cheese when it comes to pairing with wine. We have picked four West Australian wines that are perfect for the entertaining season!

Nick James Merritt grew up in the Riverland wine region of South Australia. He worked in many of Adelaide’s better restaurants and helped his family establish a vineyard in McLaren Vale, before moving to London to work for WINE magazine. For two years he traveled the wine regions of Europe, immersing himself in the world of wine, before heading back to Australia to study wine-making. After gaining experience at great wineries such as Rosemount, Vasse Felix and Stella Bella (plus overseas vintages in New Zealand and France), Nick finally settled in Margaret River and is producing excellent wines under his own label, Wines of Merritt. Nick joins us this Friday from 4:30pm – 6:30pm.

Founded in 2014 by a group of West Aussie spirit enthusiasts, Hippocampus has since moved to Melbourne to merge with Boatrocker Brewery. Although the location of the still has changed, their passion for unique, high-quality Australian spirits has not. Our Japanese chefs will be cooking vegetables, pork, wagyu beef and more on open Yakitori barbeques in the courtyard! Yakatori is best accompanied by sake – join us for a complimentary sake with our wine expert!
Ippin sake is produced by Yoshikubo brewery in Japan's Ibaraki prefecture. Founded in 1790, the Yoshikubo Family has been brewing fine sake for 12 generations. Satoshi Yoshikubo joins us to taste through these brilliant premium sakes.

Distilled, blended and bottled in Kyoto, these gin's are made from a sake rice base, sourced form the famous sake district of Fushimi. Mainly local botanicals are used including yuzu, hinoki chips, bamboo leaf, gyokuro tea, ginger, red shiso and green sansho peppers. Bottled in hand-blown glass bottles crafted in Osaka, the label was designed by Kyot's oldest maker of karakami. Truly unique, Japanese gins!

The highly anticipated yearly release of Four Pillars Australian Christmas Gin in here! With production capped at 15 000 bottles, this small batch gin has sold out every year since its inception. It’s distinctively festive flavours, such as juniper, preserved citrus and Christmas spice are indulgent and rich – exactly how a Christmas gin should taste!
Every year the three founders of Four Pillars get together to make Christmas puddings from an old family recipe. The puddings are then treated as a botanical and distilled with juniper, cloves and nutmeg. The gin is then aged in 125-year-old ex-Grants Whisky barrels that previously stored Rutherglen Muscat for 80 years.
The result - gin that tastes and smells like Christmas!

Daniel Airoldi grew up amongst the vines of Pessac, the famous suburb of Bordeaux known for the appellation of Pessac-Leognan and Chateau Haut-Brion. He studied wine at the ‘Ecole du Vin de Paris’ and worked for a négociant there before bringing his passion for wine, and particularly those of Bordeaux, to Australia. With many contacts in Bordeaux, Daniel prides himself on sourcing the best Chateaux of Bordeaux from its most trusted courtiers and winemakers.

They have purchased the famous Rayner vineyard in McLaren Vale, crafting stunning Shiraz and Grenache from here, along with Beautifully pure Adelaide Hills Chardonnay.
